Une Mead

Une Mead is a small, passionate microbrewery in North Funen, where mead is brewed with respect for tradition, ingredients, and time. Behind the brewery is Kenneth Jensen, Brewmaster and Owner of Une Mead, who started brewing mead out of pure interest in the craft and its history—and has since turned that passion into his livelihood.

At Une Mead, every batch is made from scratch. No alcohol is added, and no unnecessary aids are used to speed up the process. The alcohol content develops naturally through fermentation, which typically lasts several months. After that, the mead is aged for 6–12 months or longer, until the flavour and balance are exactly right.

Carefully selected honey from Danish beekeepers is used, along with selected berries, herbs, and spices, where quality and depth of flavour are essential. The mead is not heavily filtered, so it may appear slightly cloudy—an intentional choice to preserve as much aroma and character as possible.

The entire process—from selecting ingredients and brewing to ageing, bottling, and sealing—is handled in-house. This provides full control over quality and ensures that every bottle is an honest expression of the craft.
