The winery has 7.5 ha of land, of which 4.5 ha is mixed deciduous woodland. The vineyard itself is planted on a south-facing slope south of the house, where there is strong sunlight, which raises the temperature in the vineyard.
We grow different grape varieties and produce red, white and rosé wines.
The wines are influenced in both taste and style by the work in the vineyard, where you depend on the weather, how you prune the vines, thin the grapes, remove leaves in the fruit zone and harvest. In the winery, the wine is influenced by how it is pressed, which yeast is used, fermentation temperature, how long the wine stays on the lees, whether you adjust the acidity or do malolactic fermentation, how you rack it, and so on.
No matter what you do in the winery, the grapes’ flavour will be reflected in the finished wine, and with fruit grown in the Danish climate—where warm days are most often followed by cool nights—you get a fresh, crisp acidity that is distinctive to Danish fruit, and therefore also to Danish grapes, which in turn will shape Danish wine.
